🍢 Beef Suya
Ingredients
- 800 g beef (flank or sirloin)
- 150 g roasted unsalted peanuts
- 2 tbsp ground ginger
- 2 tbsp paprika
- 1 tbsp cayenne pepper
- 1 tsp garlic powder
- 1 stock cube
- 3 tbsp oil
- 1 raw onion
- Tomatoes, salt
Method
- Blitz the peanuts to a powder then PRESS them in kitchen paper to remove the oil: without this the spice mix clumps and burns. This is yaji, the suya spice.
- Mix that powder with the ginger, paprika, cayenne, garlic and crumbled stock cube.
- Slice the beef very thinly AGAINST the grain and thread it onto skewers.
- Brush with oil then roll generously in the yaji; marinate 2 h.
- Grill 6 to 7 min per side over high heat, dusting with more yaji halfway.
- Serve with raw onion, tomatoes and the remaining spice on the side.
