🥩 Steak in creamy garlic pepper sauce
Ingredients
- 2 beef steaks, 250 g each
- 5 garlic cloves
- 2 tbsp cracked black pepper
- 200 ml cream
- 100 ml beef stock
- 40 g butter
- 1 tbsp cognac (optional)
- Salt
Method
- Take the meat out 30 min ahead, pat it dry and salt it generously.
- Sear the steaks 3 min per side in a screaming-hot pan, then rest them 8 min on a rack.
- Lower the heat, soften the crushed garlic in butter, add the cracked pepper and let it perfume the fat for 1 min.
- Deglaze with the cognac, then add the stock and reduce by half.
- Add the cream and let it thicken 4 min over low heat, without boiling.
- Pour the resting juices into the sauce, slice the steaks and coat them.
