🍖 Old-fashioned meatloaf
Ingredients
- 900 g ground beef
- 2 tbsp olive oil
- 1 onion chopped, 3 garlic cloves crushed
- 2 tbsp ketchup
- 1 tbsp Worcestershire sauce
- 2 large eggs, 80 ml milk
- 60 g breadcrumbs
- 2 to 3 tbsp chopped parsley
- 2 tsp Italian seasoning
- 175 g ketchup for the glaze
- 1 tbsp brown sugar
- 1 tbsp Worcestershire sauce for the glaze
- Salt, pepper
Method
- Preheat the oven to 180 °C (350 °F) and line a tray with parchment: the loaf is shaped by hand straight on it.
- Soften the onion 5 to 6 min in the oil, add the garlic for 1 to 2 min, then let it cool a little.
- Mix the beef, the onion and garlic, ketchup, Worcestershire, eggs, milk, breadcrumbs, parsley, herbs, salt and pepper. Work it JUST enough to bind: overmixing gives a dense loaf.
- Shape a loaf on the tray and smooth the top and sides for even cooking.
- Bake 40 min uncovered, until the top starts to colour.
- Meanwhile whisk the ketchup, brown sugar and Worcestershire for the glaze.
- Take it out, spread the glaze and return it 12 to 15 min: it should turn glossy and lightly caramelised.
- REST it 10 min before slicing, or the slices fall apart.
