🧄 Turkish garlic bread (Sarımsaklı ekmek)
Ingredients
- 1 large loaf or a ciabatta (stale is better)
- 1 whole head of garlic
- 3 tbsp olive oil
- 2 tbsp softened butter
- A pinch of finely chopped parsley
- Grated kaşar cheese or mozzarella
- Salt, black pepper
- Chili flakes (pul biber)
Method
- Peel all the garlic cloves and fry them in 3 tbsp olive oil in a pan. DO NOT WALK AWAY: garlic burns very fast and turns bitter. Let it cool.
- Crush the cooled garlic and mix it with the softened butter, parsley, salt, pepper and chili flakes.
- Cut the loaf in half lengthwise and set it on a tray.
- Spread the garlic mixture over the whole surface of both halves.
- Cover generously with grated cheese, and a little more chili flakes if you like.
- Bake at 230 °C (450 °F) in a WELL preheated oven, about 15 min.
- Serve piping hot: hot is when the cheese pulls and the garlic perfumes everything.
