🧁 Muffin Master Recipe
Ingredients
- 115 g salted butter, softened
- 200 g granulated sugar
- 2 large eggs
- 2 tsp baking powder
- 1/2 tsp salt
- 1 tsp vanilla extract
- 250 g all-purpose flour
- 120 ml milk (or buttermilk)
- Chocolate chips, blueberries, dried fruit or nuts (your choice)
Method
- Line a 12-cup muffin tin with paper liners and grease them lightly.
- Cream the softened butter with the sugar for 2 min, until smooth and creamy.
- Beat in the eggs for 30 s, then add the baking powder, salt and vanilla (plus 1/2 to 1 tsp cinnamon if you like).
- Mix in half the flour, then the milk, then the remaining flour — mix JUST until combined: overworked batter makes tough muffins.
- Fold in the chips, fruit or nuts with a spatula, divide between the 12 liners and let the batter rest while the oven preheats to 220°C.
- Bake 7 min at 220°C then, WITHOUT opening the door, drop to 180°C and bake 13 to 15 min more: that heat shock gives the domed top. Cool 5 min before turning out.
