🧀 Fried mozzarella
Ingredients
- 450 g low-moisture mozzarella
- 125 g all-purpose flour
- 2 eggs, 2 tbsp milk
- 250 g panko breadcrumbs
- 1 tsp oregano
- 1/2 tsp garlic powder
- Salt, black pepper
- Oil for frying
Method
- Cut the mozzarella as you like: sticks, rounds, cubes. Aim for 1 cm thick.
- Set up three bowls: flour in the first, eggs beaten with milk in the second, panko mixed with oregano, garlic powder, salt and pepper in the third.
- Coat each piece in flour, shake off, then egg, then panko.
- Repeat egg then panko a second time: that double coat makes the thick crust and keeps the cheese from leaking.
- Spread on a tray and FREEZE for 20 to 30 min. Do not skip it: this is what gives the coating time to crisp before the cheese melts.
- Heat 5 cm of oil to 180 °C (350 °F). Fry in small batches 1 to 2 min per side, until deeply golden.
- Air fryer: 200 °C (390 °F), spray both sides with oil and allow 6 to 8 min, turning halfway.
- Serve at once, with tomato sauce or a garlic dip.
