🥞 Silver dollar mini pancakes
Ingredients
- 165 g plain flour
- 1 tbsp baking powder
- 3 tbsp sugar
- 2 large eggs
- 120 ml milk
- 1 tbsp melted coconut oil or olive oil
Method
- Put the flour, baking powder, sugar, eggs, milk and oil in a large bowl.
- Whisk until no dry flour remains, without labouring it: a few small lumps will vanish while cooking, whereas an overworked batter gives tough pancakes.
- Heat a lightly greased non-stick pan over medium heat. It is ready when a drop of water flicked on it bounces and evaporates at once.
- Drop coin-sized portions with a small spoon, or use a squeeze bottle so they all match.
- Cook 1 to 2 min, until bubbles appear right across the surface and the edges set.
- Flip and give them 30 to 60 seconds more, until golden on both sides.
- Stack them high and serve straight away, with maple syrup, berries or whipped cream.
