🫓 Mercimekli gözleme (Turkish lentil flatbread)
Ingredients
- 420 g flour
- 300 ml lukewarm water
- 1 tbsp oil
- 1 tsp salt
- 200 g green lentils
- 2 onions, finely chopped
- 2 tbsp oil
- 1 tbsp tomato paste
- 1 tsp paprika
- 1/2 tsp chilli flakes
- 3 tbsp chopped parsley
- Salt, pepper
Method
- Tip the flour into a large bowl, make a well and add the oil, salt and lukewarm water.
- Knead for about ten minutes until you have a soft dough that no longer sticks to your hands, then cover and rest 20 min.
- Simmer the green lentils in boiling water until thoroughly tender, then drain them.
- Crush them roughly with the back of a wooden spoon: the filling should hold together without becoming a purée.
- Soften the onions in the oil, add the tomato paste, paprika and chilli flakes, then the lentils, salt and pepper. Let it cool before filling, or the dough will tear.
- Stir the parsley into the cooled filling.
- Divide the dough into 4, roll each ball out as thinly as you can into a large disc, spread the filling over one half and fold it over.
- Cook dry on a hot griddle, 2 to 3 min each side, until golden patches appear. Brush with melted butter and serve at once.
