🥔 Potato latkes
Ingredients
- 1 kg potatoes (4 to 5 medium)
- 1 onion
- 2 beaten eggs
- 2 tbsp flour or breadcrumbs
- Salt, 1/2 tsp black pepper
- Oil for frying
Method
- Fill a large bowl with cold water. Peel the potatoes and onion and grate them STRAIGHT into the water: that is what stops them browning.
- Drain, then wrap everything in a clean tea towel and twist hard to squeeze out as much liquid as you can. That step decides the crispness.
- Tip into a bowl with the beaten eggs, flour, salt and pepper, and stir.
- Heat a generous layer of oil over medium-high. Drop 2 to 3 tbsp of mixture per fritter and flatten slightly.
- Allow 3 to 4 min per side, until golden and crisp.
- Drain on kitchen paper, salt lightly and serve hot, with sour cream or apple sauce.
