🍅 Crisp rice paper with tomato tartare
Ingredients
- 4 meaty tomatoes
- 6 small rice paper sheets
- A handful of rehydrated wood ear mushrooms, sliced
- 1 tbsp sesame oil
- 2 tbsp soy sauce
- Juice of half a lime
- 1 tsp honey
- Fresh coriander
- Crushed peanuts
- Sunflower oil for frying
Method
- Drop the rice paper sheets into hot oil DRY, straight from the packet: they puff and crisp in seconds. Do not soak them — this is not the spring-roll method.
- Drain on kitchen paper and let them cool: they harden as they cool.
- Dice the tomatoes small and let them drain a few minutes in a sieve.
- Whisk the sesame oil, soy sauce, lime juice and honey.
- Toss the tomatoes and sliced wood ear mushrooms in this dressing.
- Top each crisp sheet with the tartare just before serving, or it will soften.
- Scatter with coriander and crushed peanuts.
