🦐 Braised prawns in scallion oil
Ingredients
- 700 g large whole prawns
- 6 spring onions
- 1 piece of ginger, sliced
- 3 tbsp soy sauce
- 1 tbsp rice wine (or dry sherry)
- 1 tsp sugar
- 6 tbsp neutral oil
- Salt, pepper
Method
- Trim the antennae and slit the backs to remove the vein, but leave the shells on: they carry all the flavour.
- Fry the cut spring onion and ginger 5 min in the oil over low heat, until golden and the oil is fragrant. Lift them out.
- Turn the heat up and sear the prawns 2 min per side in that oil: they should turn bright red.
- Pour the rice wine down the side of the pan, then add the soy sauce and sugar.
- Add half a glass of water, cover and braise 5 min.
- Uncover, reduce the sauce until it coats, return the fried spring onion and serve with white rice.
