🌮 Cheesy beef tortilla cones
Ingredients
- 450 g lean ground beef
- 1 small yellow onion, diced
- 1 large tomato, diced
- 2 garlic cloves, minced
- 1 tsp paprika, 1 tsp garlic powder
- 1 tsp chilli powder, 1/2 tsp ground cumin
- 1/2 tsp onion powder, salt and pepper
- 4 large flour tortillas
- 8 mozzarella sticks, halved
- 100 g shredded cheddar
- Olive oil
- For the sauce: 250 g Greek yoghurt, 1 cup fresh coriander, 1 seeded jalapeño, 1 garlic clove, juice of 1 lime, 1 tsp honey, salt
Method
- Preheat the oven to 220 °C (425 °F) and line a baking sheet.
- Brown the ground beef over high heat, breaking it up. Push it to the sides of the pan and soften the onion in the middle for 3 to 4 min, then stir everything together.
- Add the diced tomato and let it break down for 3 to 4 min.
- Add the garlic and all the spices, and let them become fragrant for 1 min. Add 2 to 3 tbsp water and cook 2 to 3 min more: the mixture should be moist but not watery, or it will soak the tortillas.
- Take off the heat and cool for 10 min.
- Cut each tortilla in half. Fold the two straight edges over each other to form a cone open at the top, and set it seam-side down on the tray.
- Slip a piece of mozzarella into the bottom of each cone, spoon in the beef, then cover generously with shredded cheddar.
- Drizzle with olive oil and bake 12 to 16 min, until deeply golden and the cheese is bubbling.
- Meanwhile blend all the sauce ingredients until smooth and pourable.
- Serve the cones piping hot with the coriander yoghurt sauce alongside.
