🫓 Multigrain cheela (Indian savoury pancakes)
Ingredients
- 60 g gram flour (besan)
- 60 g rice flour
- 60 g ragi (millet) flour
- 1/2 tsp turmeric
- 1/2 tsp ground cumin
- 3/4 tsp red chilli powder
- 1 tbsp ginger-garlic paste
- 250 g grated paneer
- Green chutney
- Mixed seeds, lettuce leaves
- Oil, salt
Method
- Mix the three flours with the turmeric, cumin, chilli, salt and ginger-garlic paste.
- Whisk in about 300 ml water a little at a time, until you have a smooth pourable batter.
- Heat a non-stick pan, oil it lightly and spread a ladleful of batter into a thin pancake.
- Cook 2 to 3 min over medium heat, flip and give it 2 min more.
- Flip again and spread the pancake with green chutney.
- Scatter over the grated paneer, salt and mixed seeds.
- Lay a few lettuce leaves on top, fold, and serve hot.
