🍫 Cottage cheese brownies
Ingredients
- 225 g cottage cheese
- 80 ml maple syrup
- 2 ripe bananas
- 70 g dark chocolate
- 2 large eggs
- 50 g all-purpose flour
- 30 g cocoa powder
- 1/2 tsp baking powder
- 40 g walnuts, chopped
- A pinch of salt
Method
- Preheat the oven to 180 °C (350 °F) and line a 20 cm square tin with parchment.
- Blend the cottage cheese, maple syrup and bananas until completely smooth, then tip into a bowl. The blending is essential: it is what makes the cottage cheese grains disappear.
- Melt the dark chocolate gently, let it cool slightly and stir it in.
- Add the eggs and mix, then the flour, cocoa, baking powder and salt, until smooth. Fold in the walnuts.
- Pour into the tin and bake 20 to 24 min: the edges should be set and the centre still slightly soft. A skewer comes out with moist crumbs, never wet batter.
- Let them cool COMPLETELY before cutting — the cooling is what gives the fudgy texture.
