🍑 Peach, prosciutto and basil skewers with honey
Ingredients
- 2 yellow peaches, ripe but firm
- 8 thin slices of cured ham (prosciutto or coppa)
- 8 mozzarella balls (bocconcini)
- 16 fresh basil leaves
- 2 tbsp runny honey
- 2 tbsp extra virgin olive oil
- Freshly ground black pepper
- 8 small wooden skewers
Method
- Wash the peaches but do not peel them: the skin holds the wedge on the skewer and adds colour. Cut each into quarters.
- Choose them ripe but FIRM. Overripe, they tear as the skewer goes through and weep juice onto the plate.
- Cut each ham slice in half lengthways, then fold it back on itself like a ribbon to form a small rosette.
- Thread onto each skewer: a peach wedge, a ham rosette, a basil leaf, a mozzarella ball, then a second basil leaf.
- Lay the skewers flat on a serving plate.
- Drizzle with olive oil, then with honey in a thin stream — that contrast between sweet honey and salty ham is the whole point of the dish.
- Add a turn of black pepper and serve at once, at room temperature: straight from the fridge, peach and mozzarella taste of nothing.
