🥩 Marinated beef with cilantro
Ingredients
- 500 g beef sirloin, thinly sliced
- 1 tbsp cornstarch, 2 tbsp water (marinade)
- 1 bunch cilantro
- 3 garlic cloves, 1 piece of ginger
- 3 tbsp soy sauce, 1 tbsp rice vinegar
- 1 tsp sesame oil, 1 tsp sugar
- Chili powder, neutral oil
Method
- Slice the beef thinly, across the grain — that does more for tenderness than any marinade.
- Work in the water first, until it is absorbed, then the cornstarch.
- Dip the slices 40 seconds in barely simmering water, then drain at once.
- Make the sauce: chopped garlic and ginger, soy sauce, vinegar, sugar, sesame oil and chili.
- Heat 3 tbsp oil until smoking and pour it over the garlic: the aroma is released all at once.
- Toss the warm beef with the sauce and chopped cilantro, and serve straight away.
