🥜 Homemade peanut butter
Ingredients
- 450 g unsalted peanuts, roasted or raw
- 1/4 tsp flaky sea salt (optional)
- 1 to 2 tsp maple syrup or honey (optional)
Method
- If your peanuts are already roasted, warm them 3 to 5 min in a 175 °C (350 °F) oven. If raw, roast them 8 to 10 min at the same temperature, until fragrant and lightly golden.
- Warm peanuts blend far faster and give a smoother butter: that is the whole point of this step.
- Tip them into a powerful blender and blend on high. They will pass through a wet-sand stage where the mixture stops circulating.
- Stop, push the mixture back towards the blades with a wooden spoon, and start again. Repeat as needed.
- After a few minutes the peanuts suddenly release their oil and turn creamy. Do not stop before that switch.
- Add the salt and maple syrup if using, then blend briefly. Taste and adjust.
- Pour into a clean jar and let cool completely before sealing. Keeps 3 weeks in the fridge; stir if the oil rises.
